Kolambi Rice is a Maharashtrian dish which is also known as Prawn Biriyani or Prawn Pulao.
What you need:
1. Grated coconut 1 bowl
2. Mint leaves
3. Dhaniya leaves
4. Coconut milk 250 ml
5. Grated ginger and garlic
6. Cloves, dalchini, ilaichi and star anise
7. Cumin seeds
8. Chopped onion 1
9. 4-5 chopped chilly
10. Chopped tomatoes 1/2
First take some basmati rice and soak it in water for one hour. Take some washed and cleaned prawns. Add some haldi powder, salt, dhegimirch powder and 3 teaspoons of lime juice. Mix it well and put it in freezer for 1 hour.
Now we will prepare the paste which is the main ingredient for this dish. Take some chopped coconut, mint and dhania leaves, salt, chopped ginger and garlic. Add little water to it and grind it to make a fine paste.
Now take a frying pan. Add some oil to it. Put cumin seeds, ilaichi, dalchini and star anise. Fry it for sometime. Then add chopped onions and tomatoes to it. Add some chilli powder, Dhania powder and biriyani powder to it. Once the color changes to golden brown add the marinated prawns to it. Then add some water and coconut milk to it. Add the soaked rice to it. Mix it for 1 min. Keep it covered in low flame for 30 mins.
Your Kolambi rice is ready.
